Vegetable Salad with Dressing
1 package spinach
1 red bell pepper
1 green bell pepper
1/3 red onion
1 cup olive oil
Juice from 1 lemon
1 teaspoon salt
1 teaspoon pepper
Rinse the spinach and let dry. Cut the spinach with your hands, into bite size pieces. Place spinach in a bowl and pour 1/2 cup of olive oil and lemon juice on top.
Chop the pepper and onion. Place the peppers, onion, the remaining olive oil, salt and pepper in a food processor. Blend until liquid. Pour dressing mixture over spinach. Enjoy!
