Tomato and Cucumber Soup
3 tomatoes
1/2 cucumber
2 green onions
1 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon thyme
Pepper to taste
Plunge the tomatoes for a minute into hot boiling water. Then peel, seed and chop the tomatoes and cucumber. Place the tomatoes and cucumber into a food processor. Add the green onions and blend until smooth. Pour tomato mixture into a saucepan. Heat on medium. After a few minutes, pour in cream, salt and thyme. Once heated through, remove from stove. Season with salt and pepper and serve.
