Leafy greens will keep you healthy!
Yeah yeah, you ‘ve heard it before: Leafy vegetables have miraculous properties. Greens like spinach and broccoli are full of essential vitamins such as A, K, B1 and B2 and vital minerals like iron, potassium and magnesium. Very high in calcium and vitamin C, protect against infections and diseases, also toxins and bacteria.
What you didn’t know is that greens are very easy to cook! That’s right, there are many different methods for cooking all the leafy greens out there. Some are tender and cook fast, others like Kale may need a bit more cooking. I prefer leaving the leaf whole when cooking, however if there are tough stems its best to slice into smaller pieces. This method can also decrease the bitterness of some vegetables, but in some cases it will diminish some of the nutritional value.
And there are many exciting ways to enjoy your greens, not just boiling! Most leafy vegetables can be steamed, sauteed, added to soups and pasta plates, or even served as a side dish with olive oil and/or lemon.
